The reason I chose tortilla is because the eggs are employ for a main dish in tortilla and the eggs are used to bind and coagulate the ingredients together which shows how versatile eggs can be in this dish. And the crème catalana the eggs are used as a cooking agent and I have chosen a sweet and a savoury dish to show how eggs can be used differently.
